Delicious Pescatarian Tostadas
Here is an exciting easy pescatarian recipe that can grace your table any night of the week. It’s one of my favorite little recipes that evokes images of tapas at the finest Spanish or Mexican restaurant and something you may feel you are not capable of pulling off – when really, you are.
Nutritionally Diverse
Move over Cheerios and milk and welcome “Grilled Shrimp Tostadas” for dinner (compliments of eatingwell.com). This is an easy pescatarian recipe that is simple to make and that everyone will love because there are so many different layers of tastes and flavors that it’s impossible not to enjoy. It’s quick and easy and supplies fuel from almost every single food group, so it’s nutritious and delicious!
The best part is that it only takes a total of 20 minutes to create in your kitchen. The recipe easily doubles for a crowd. The Tajin is a spice made of lime, salt and chili peppers. It can be ordered on Amazon, Walmart and even Target. The crumbled cotija should really not be substituted if you can help it, because it’s a truly authentic Mexican cheese made from cow’s milk that has a salty and milky flavor. Similar to feta, but tastes oh so different…you can find this cheese in Latin American stores and even Market Basket if you live in the north east. So, so, good..
Easy pescatarian recipe to make and great for any season
You can use your outdoor grill, air fryer or a cast iron skillet to sear the shrimp. Toast the corn tortillas on your grill or grill pan as well. This can be made any time of the year. The toppings of red cabbage, guacamole and jalapenos round this off perfectly. This can be served with any leftover red cabbage you might have – shred, add balsamic vinegar, olive oil and a little salt and you have a delicious side salad that is refreshing and pairs perfectly with your tostadas.

Grilled Shrimp Tostadas

- Preheat grill to medium-high.
- Toss shrimp with 1 tablespoon oil, chile-lime seasoning and garlic powder in a large bowl. Thread onto four 12-inch metal skewers. Brush both sides of each tortilla with the remaining 1 tablespoon oil.
- Grill the shrimp until lightly browned and cooked through, flipping once, about 4 minutes. Grill the tortillas until lightly charred and crispy, flipping once, about 2 minutes.
- Top the tortillas with cabbage, guacamole, jalapeño and the grilled shrimp. Sprinkle with cilantro and serve with cotija and sour cream, if desired.
